2 cups shredded cooked chicken (rotisserie chicken works great)

½ cup Buffalo sauce (adjust based on spice preference)

1 tablespoon olive oil

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

1 teaspoon onion powder

1 cup shredded carrots

½ cup diced celery

¼ cup diced green onions (scallions)

1 cup crumbled blue cheese (optional)

1 head of butter or romaine lettuce (separated into leaves)

Fresh cilantro for garnish (optional)

Prepare the Sauce: In a mixing bowl, combine the shredded chicken with the Buffalo sauce, olive oil, apple cider vinegar, garlic powder, and onion powder. Mix well until the chicken is evenly coated with the sauce.

    Sauté Vegetables: In a medium skillet over medium heat, add the shredded carrots and diced celery. Sauté for about 3-4 minutes until they are slightly softened. This step enhances their flavor and texture.

      Combine Mixtures: Add the sautéed vegetables to the Buffalo chicken mixture, and toss in the diced green onions. Stir everything together until well combined. If using blue cheese, fold it in gently at this stage (reserve some for garnish).
