Ingredients

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup pecans, chopped (toasted for added flavor)

1/2 teaspoon ground cinnamon (optional for added warmth)

1/2 cup white chocolate chips (optional for sweetness)

Instructions

Preheat the Oven: Preheat your oven to 350°F (180°C) and line two baking sheets with parchment paper.

Cream the Butter and Sugars: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy. This should take about 3-5 minutes.

Add the Egg and Vanilla: Beat in the egg and vanilla extract until fully combined.

Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon (if using). Gradually add the dry mixture to the wet ingredients, mixing just until a dough forms. Be careful not to over-mix.

Fold in the Pecans and Chips: Gently fold in the toasted pecans and white chocolate chips until evenly distributed through the dough.

Scoop the Dough: Use a cookie scoop or tablespoon to drop rounded balls of dough onto the prepared baking sheets, leaving about 2 inches between each cookie to allow for spreading.

Bake the Cookies: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden but the centers are still soft. They will continue to firm up as they cool.

Cool the Cookies: Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.

Enjoy: Once cooled, enjoy your delicious butter pecan cookies with a glass of milk or your favorite hot beverage!
