1 medium butternut squash (about 2 pounds), peeled and diced

4 cups fresh spinach, washed and chopped

1 small onion, diced

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Gruyère cheese (plus extra for topping)

1 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon nutmeg

Salt and pepper to taste

1 cup Panko breadcrumbs

Fresh thyme leaves, for garnish

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Cook the Butternut Squash: In a large pot, bring salted water to a boil. Add the diced butternut squash and cook for about 10-12 minutes until tender. Drain and set aside.

      Sauté the Aromatics: In a large skillet or pan, heat the olive oil over medium heat. Add the diced onion and sauté for about 4-5 minutes until translucent. Add the minced garlic and cook for another minute until fragrant.

        Combine Spinach and Squash: Add the chopped spinach to the skillet with onions and garlic. Cook for about 3-4 minutes, stirring until wilted. Then, add the cooked butternut squash to the mixture. Season with nutmeg, salt, and pepper. Stir well to combine.

          Prepare the Cream Mixture: In a bowl, whisk together the heavy cream, Gruyère cheese, and half of the Parmesan cheese. Pour this mixture over the butternut squash and spinach mixture and stir until everything is well coated.

            Assemble the Gratin: Transfer the mixture into a greased 9x13 inch baking dish. Spread it evenly. Top with the remaining Parmesan cheese and a generous layer of Panko breadcrumbs. Sprinkle a little extra Gruyère cheese on top for a crispy finish.

              Bake the Gratin: Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the top is golden brown and bubbling.
