Caprese Pasta Salad

Ingredients
  

8 ounces of cherry tomatoes, halved

8 ounces of fresh mozzarella balls (bocconcini), halved

8 ounces of pasta (fusilli or penne works best)

1 cup of fresh basil leaves, torn

¼ cup of extra virgin olive oil

2 tablespoons of balsamic vinegar

1 teaspoon of minced garlic

Salt and pepper to taste

Optional: ¼ teaspoon of red pepper flakes for a kick

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Dressing: In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, minced garlic, salt, pepper, and red pepper flakes (if using) until well combined.

      Combine Ingredients: In a large mixing bowl, add the cooled pasta, halved cherry tomatoes, mozzarella balls, and torn basil leaves.

        Dress the Salad: Pour the prepared dressing over the pasta mixture. Toss everything gently until all the ingredients are well coated with the dressing.

          Chill and Serve: Allow the pasta salad to sit for at least 15 minutes at room temperature or refrigerate for up to 2 hours to let the flavors meld. Serve chilled or at room temperature.

            Garnish: Before serving, toss again and adjust seasoning if necessary. Garnish with additional basil leaves and a drizzle of balsamic reduction for extra flair, if desired.
