1 lb (450g) flank steak or sirloin, sliced thin against the grain

2 large onions, thinly sliced

1 tablespoon olive oil

2 tablespoons unsalted butter

Salt and pepper to taste

4 slices provolone cheese (or your favorite cheese)

4 hoagie rolls or baguette-style bread, sliced open

Optional: 1 tablespoon Worcestershire sauce

Optional: Fresh arugula or spinach for garnish

Caramelize the Onions: In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring frequently, for about 20-25 minutes until onions become soft and deeply caramelized. If desired, stir in Worcestershire sauce during the last 5 minutes. Remove from heat and set aside.

    Cook the Steak: In the same skillet (add more butter if needed), increase the heat to medium-high. Season the thinly sliced steak with salt and pepper. Cook for 3-4 minutes, stirring occasionally, until the steak is browned but still tender. Remove from heat.

      Assemble the Sandwich: Preheat your oven's broiler. On each hoagie roll, layer some caramelized onions, followed by the cooked steak slices. Top each sandwich generously with provolone cheese.

        Melt the Cheese: Place the assembled sandwiches on a baking sheet and broil for 1-2 minutes, or until the cheese is bubbly and golden. Keep a close eye on them to prevent burning!
