1 medium onion, chopped

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 pound carrots, peeled and chopped

4 cups vegetable broth (or chicken broth)

1 can (13.5 oz) coconut milk

1 teaspoon ground cumin

1 teaspoon turmeric powder

Salt and pepper, to taste

Juice of 1 lime

Fresh cilantro, for garnish

Red pepper flakes (optional, for heat)

Sauté Base: In a large pot, heat the coconut oil over medium heat. Add the chopped onion and sauté for about 5 minutes, until it becomes translucent.

    Add Aromatics: Stir in the minced garlic and grated ginger, cooking for another 2 minutes until fragrant.

      Incorporate Carrots: Add the chopped carrots to the pot and sprinkle in the ground cumin and turmeric. Stir well to coat the vegetables with the spices.
