1 cup rolled oats

1/2 cup almond butter (or any nut/seed butter of your choice)

1/4 cup honey or maple syrup

1/4 cup dried cranberries, chopped

1/4 cup mini dark chocolate chips

1/4 cup diced cheese (like cheddar or gouda)

1/4 cup sliced almonds

1/4 cup thinly sliced salami or prosciutto, chopped

1 tsp balsamic vinegar

Pinch of sea salt

Optional: 1 tsp fresh herbs (like rosemary or thyme) for added flavor

Instructions
 

Mix the Base: In a large mixing bowl, combine the rolled oats, almond butter, honey (or maple syrup), and a pinch of sea salt. Stir until well incorporated.

    Add the Flavors: Gently fold in the dried cranberries, mini chocolate chips, diced cheese, sliced almonds, chopped salami (or prosciutto), and balsamic vinegar. If desired, add in the fresh herbs for a fragrant twist.

      Form the Bites: Once the mixture is well combined and sticky, use your hands to form small bite-sized balls (about 1 inch in diameter) with the mixture. If it’s too crumbly, add a little more nut butter or honey to help it hold together.

        Chill Out: Place the formed energy bites on a parchment-lined baking sheet. Refrigerate for at least 30 minutes to firm up.

          Serve: Once chilled, they are ready to enjoy! Store leftovers in an airtight container in the fridge for up to a week.
