Ingredients

4 medium russet potatoes

2 cups fresh broccoli florets (steamed and chopped)

1 cup shredded sharp cheddar cheese

1/2 cup sour cream

1/4 cup milk

2 tablespoons butter

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1/4 cup chopped green onions (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Bake the Potatoes: Scrub the russet potatoes under cold water to remove any dirt. Poke holes in the potatoes with a fork to allow steam to escape. Place them directly on the oven rack (or on a baking sheet lined with foil) and bake for 45-60 minutes, or until they're soft when squeezed.

Prepare the Broccoli: While the potatoes are baking, steam the broccoli florets until tender, about 4-5 minutes. Once cooked, chop them into smaller pieces.

Make the Filling: In a mixing bowl, combine the steamed broccoli, shredded cheddar cheese, sour cream, milk, butter, garlic powder, onion powder, salt, and pepper. Mix well until the ingredients are fully incorporated.

Stuff the Potatoes: Once the potatoes are done baking, remove them from the oven and allow them to cool slightly. Cut a slit down the center of each potato and gently squeeze the ends to open them up. Use a fork to fluff the inside of the potato, then spoon the broccoli and cheese mixture into each potato, piling it generously on top.

Melt and Serve: Place the stuffed potatoes back in the oven for an additional 10-15 minutes, until the cheese is melted and bubbly.

Garnish and Enjoy: Remove the potatoes from the oven, sprinkle with chopped green onions, and serve hot.
