Cheddar Broccoli Soup in Bread Bowls

2 cloves garlic, minced

4 cups fresh broccoli florets

1 medium potato, peeled and diced

4 cups vegetable broth

1 cup heavy cream

2 cups shredded sharp cheddar cheese

4 large round bread loaves (sourdough or boule preferred)

Optional toppings: croutons, extra cheese, fresh chives

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

    Add Veggies: Introduce the broccoli florets and diced potatoes to the pot. Sauté for 2-3 minutes.

      Simmer: Pour in the vegetable broth, bring to a boil, then reduce the heat to a simmer. Cover and cook until the broccoli and potatoes are tender, about 15-20 minutes.

        Blend the Soup: Once cooked, use an immersion blender to puree the soup to your desired consistency. For a chunkier texture, blend only half of the soup.

          Add Cream and Cheese: Stir in the heavy cream and shredded cheddar cheese, allowing it to melt into the soup. Mix well and season with salt and pepper to taste.

            Prepare Bread Bowls: While the soup is cooking, preheat your oven to 375°F (190°C). Carefully hollow out the center of each bread loaf, creating a bowl while ensuring the sides remain thick enough to hold the soup.

              Toast the Bread Bowls: Place the hollowed bread bowls on a baking sheet and bake in the preheated oven for about 10 minutes, or until golden and slightly crispy.

                Assemble: Remove the bread bowls from the oven. Pour the hot cheddar broccoli soup into each bread bowl, filling them generously.
