1 lb (450g) beef sirloin, thinly sliced

2 cups fresh broccoli florets

1 medium onion, sliced

3 cloves garlic, minced

1 cup shredded cheddar cheese

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 tablespoon cornstarch

2 tablespoons vegetable oil

1 teaspoon sesame oil

Salt and pepper to taste

Cooked rice or noodles, for serving

Prepare the Beef: In a mixing bowl, combine the sliced beef with soy sauce, oyster sauce (if using), cornstarch, salt, and pepper. Mix well and set aside to marinate for about 15 minutes.

    Blanch the Broccoli: While the beef is marinating, bring a pot of salted water to a boil. Add the broccoli florets and blanch for 2-3 minutes until vibrant green and slightly tender. Drain and set aside.

      Stir-Fry the Beef: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the marinated beef in a single layer, cooking for about 2-3 minutes without stirring to get a nice sear. Then, stir-fry the beef until it's browned and cooked through, about an additional 2 minutes. Remove the beef from the pan and set aside.

        Sauté Vegetables: In the same skillet, add the sliced onion and cook until translucent, about 2 minutes. Then add the minced garlic and cook for another minute until fragrant.

          Combine Ingredients: Return the beef to the skillet and add the blanched broccoli. Pour in the sesame oil and toss everything together gently to combine. Cook for an additional 2-3 minutes to heat through and meld the flavors.

            Add Cheese: Remove the skillet from heat and sprinkle the shredded cheddar cheese over the beef and broccoli mixture. Cover for a couple of minutes until the cheese melts into gooey perfection.
