Cheesy Beef Noodle Casserole

12 oz wide egg noodles

1 lb ground beef

1 medium onion, chopped

2 cloves garlic, minced

1 can (10.5 oz) cream of mushroom soup

1 cup sour cream

2 cups shredded cheddar cheese (divided)

1 cup frozen mixed vegetables (peas, corn, and carrots)

1 tsp Worcestershire sauce

1 tsp Italian seasoning

Salt and pepper to taste

½ cup breadcrumbs (optional for topping)

2 tbsp olive oil

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Noodles: In a large pot, bring salted water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside.

      Sauté the Beef: In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.

        Brown the Beef: Add the ground beef to the skillet. Cook until browned, breaking it apart with a spoon. Drain excess grease if necessary.

          Combine Ingredients: In a large bowl, combine the cooked noodles, browned beef mixture, cream of mushroom soup, sour cream, 1 ½ cups of shredded cheddar cheese, mixed vegetables, Worcestershire sauce, Italian seasoning, and salt and pepper. Stir until everything is well mixed.

            Prepare the Baking Dish: Pour the mixture into a greased 9x13 inch baking dish, spreading it out evenly.

              Add Topping: If using, sprinkle the breadcrumbs evenly over the top, then add the remaining ½ cup of shredded cheddar cheese for extra cheesiness.

                Bake the Casserole: Bake in the preheated oven for 30-35 minutes, or until the casserole is bubbly and the cheese is golden brown.

                  Cool and Serve: Allow to cool for 5-10 minutes before serving. This dish pairs well with a fresh green salad or garlic bread.
