4 cups cauliflower rice (fresh or frozen)

2 cups broccoli florets (fresh or frozen)

1 cup sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1/2 cup cream cheese, softened

1/2 cup milk (can use almond or oat milk for a lighter version)

2 cloves garlic, minced

1/4 cup grated Parmesan cheese

1 tsp onion powder

1 tsp garlic powder

1/2 tsp salt (adjust to taste)

1/4 tsp black pepper

1/4 tsp cayenne pepper (optional for a kick)

1/2 cup breadcrumbs (optional, for topping)

2 tbsp olive oil or melted butter (for breadcrumbs)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.

    Prepare the Cauliflower Rice: If using frozen cauliflower rice, cook it according to package instructions. Drain any excess moisture and set aside. If using fresh, pulse cauliflower florets in a food processor until it resembles rice.

      Blanch Broccoli: If using fresh broccoli, bring a pot of water to a boil. Add the broccoli florets and blanch for 2-3 minutes until vibrant green, then immediately transfer them to an ice bath to stop the cooking process. Drain and chop.

        Mix Ingredients: In a large mixing bowl, combine the cauliflower rice, blanched broccoli, sharp cheddar cheese, mozzarella cheese, cream cheese, milk, garlic, Parmesan cheese, onion powder, garlic powder, salt, pepper, and cayenne pepper. Stir until all ingredients are well mixed and evenly distributed.

          Transfer to Baking Dish: Pour the mixture into the prepared baking dish, spreading it evenly.

            Prepare Topping: If using breadcrumbs, combine them with olive oil or melted butter in a small bowl. Mix until the breadcrumbs are coated. Sprinkle this mixture evenly over the top of the casserole.

              Bake: Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and the top is golden brown.
