Cheesy Broccoli and Chicken Rice Bowl

1 cup uncooked jasmine rice

2 cups chicken broth

1 lb boneless, skinless chicken breasts, diced

2 cups fresh broccoli florets

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup shredded sharp cheddar cheese

½ cup grated Parmesan cheese

2 tablespoons butter

Optional: red pepper flakes for garnish

Cook the Rice: In a medium saucepan, combine the jasmine rice and chicken broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and the liquid is absorbed. Fluff with a fork and set aside.
