1 medium head of cauliflower, cut into florets

1 medium head of broccoli, cut into florets

2 tablespoons of olive oil

3 cloves of garlic, minced

1 cup of heavy cream

1 cup of sharp cheddar cheese, shredded

1 cup of Gruyère cheese, shredded

1/2 cup of Parmesan cheese, grated

1 teaspoon of Dijon mustard

1/2 teaspoon of nutmeg

Salt and pepper to taste

1 cup of panko breadcrumbs

2 tablespoons of fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare the Vegetables: In a large pot, bring salted water to a boil. Add the cauliflower and broccoli florets and cook for about 4 minutes until just tender. Drain and set aside.

      Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

        Make the Cheese Sauce: Reduce the heat to low, then pour in the heavy cream. Stir in the Dijon mustard, nutmeg, and season with salt and pepper. Gradually add the cheddar, Gruyère, and half of the Parmesan cheese, stirring continuously until the cheeses have melted and the mixture is smooth.

          Combine Vegetables and Sauce: In a large mixing bowl, combine the cooked cauliflower and broccoli with the cheese sauce. Gently stir until the vegetables are evenly coated.

            Prepare for Baking: Transfer the mixture into a greased baking dish.

              Top with Breadcrumbs: In a small bowl, mix together the panko breadcrumbs and the remaining Parmesan cheese. Sprinkle this topping evenly over the vegetable mixture.

                Bake the Gratin: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the edges are bubbling.

                  Garnish and Serve: Once done, remove the gratin from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley before serving.
