Ingredients

1 medium head of cauliflower, cut into florets

1 medium head of broccoli, cut into florets

2 cups shredded cheddar cheese

1 cup grated Parmesan cheese

1 cup heavy cream

1 cup milk

2 tablespoons butter

3 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon mustard powder

½ teaspoon paprika

Salt and pepper, to taste

½ cup breadcrumbs (optional, for topping)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter or cooking spray.

Prepare Vegetables: In a large pot of boiling salted water, blanch the cauliflower and broccoli florets for about 3-4 minutes until slightly tender but still crisp. Drain and run under cold water to stop the cooking process. Set aside.

Make Cheese Sauce: In a medium saucepan, melt 2 tablespoons of butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Stir in the heavy cream and milk, and bring the mixture to a gentle simmer.

Add Cheese: Gradually whisk in the cheddar and Parmesan cheese until melted and creamy. Mix in the onion powder, mustard powder, paprika, salt, and pepper. Remove from heat.

Combine Vegetables and Sauce: In a large mixing bowl, combine the blanched cauliflower and broccoli with the cheese sauce. Stir until the vegetables are evenly coated.

Bake the Dish: Transfer the mixture to the prepared baking dish. If using, sprinkle breadcrumbs evenly on top for extra crunch.

Bake: Place in the preheated oven and bake for 25-30 minutes, or until the top is golden and bubbly.

Serve and Garnish: Once baked, let it sit for about 5 minutes before serving. Garnish with freshly chopped parsley for a pop of color and flavor.
