4 large eggs

1/2 cup shredded cheese (cheddar or pepper jack)

1/2 cup canned chili (beanless or with beans, based on preference)

1/4 cup diced onion

1/4 cup diced bell pepper

2 tablespoons mayonnaise

1 teaspoon Dijon mustard

Salt and pepper, to taste

4 slices of your favorite bread (sourdough, whole grain, or rye work well)

Butter, for toasting

Optional toppings: sliced jalapeños, fresh cilantro, or avocado

Prepare the Ingredients: Start by gathering all your ingredients. Dice the onion and bell pepper into small pieces and set them aside.

    Cook the Vegetables: In a medium skillet over medium heat, add a teaspoon of butter. Once melted, add the diced onion and bell pepper. Sauté until softened, about 3-4 minutes. Remove from heat.

      Scramble the Eggs: In a mixing bowl, crack and whisk the eggs. Season with salt and pepper to taste. Pour the eggs into the same skillet and scramble them until just set but still creamy, approximately 3-4 minutes. Remove from heat.

        Combine the Ingredients: Fold in the sautéed vegetables, shredded cheese, and canned chili into the scrambled eggs. Mix gently until the cheese begins to melt and everything is well combined.

          Make the Sandwiches: In a small bowl, mix together the mayonnaise and Dijon mustard. Spread this mixture on one side of each slice of bread.
