Ingredients
  

2 cups mashed potatoes (fresh or leftover)

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

1/4 cup sour cream

1 large egg

1 tablespoon chopped chives (or green onions)

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon black pepper

1/4 teaspoon salt (to taste)

1 cup breadcrumbs (Panko for extra crunch)

Olive oil spray or melted butter (for greasing)

Instructions
 

Preheat the Oven:

    - Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease it with olive oil spray or melted butter.

      Mix the Ingredients:

        - In a large mixing bowl, combine the mashed potatoes, shredded cheddar cheese, grated Parmesan cheese, sour cream, egg, chopped chives, garlic powder, onion powder, black pepper, and salt. Stir until everything is well combined and creamy.

          Form the Puffs:

            - Using your hands or a small ice cream scoop, form the mixture into small balls or puffs, about 1 to 1.5 inches in diameter. Roll each puff in breadcrumbs until fully coated.

              Arrange on the Baking Sheet:

                - Place the breadcrumb-coated puffs on the prepared baking sheet, leaving some space between each puff for even baking.

                  Bake the Puffs:

                    - Lightly spray the tops of the puffs with olive oil or drizzle melted butter over them. Bake in the preheated oven for 20-25 minutes, or until they are golden brown and crispy.

                      Serve:

                        - Once baked, remove the puffs from the oven and let them cool for a few minutes. Serve warm as a delicious appetizer or side dish.
