4 large russet potatoes, peeled and thinly sliced

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 cup heavy cream

1 cup whole milk

3 cloves garlic, minced

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon dried thyme

1 teaspoon smoked paprika

1/2 cup grated Parmesan cheese

2 tablespoons fresh chives, chopped (for garnish)

2 tablespoons unsalted butter, for greasing

Instructions
 

Preheat the oven: Preheat your oven to 350°F (175°C). Grease a large baking dish with butter and set aside.

    Prepare the cream mixture: In a medium bowl, whisk together the heavy cream, whole milk, minced garlic, salt, black pepper, dried thyme, and smoked paprika until well combined.

      Layer the potatoes: Arrange half of the sliced potatoes in the bottom of the greased baking dish. Pour half of the cream mixture over the potatoes. Sprinkle with half of the cheddar and mozzarella cheese.

        Repeat layers: Place the remaining potatoes on top, followed by the rest of the cream mixture. Top with the remaining cheddar and mozzarella cheeses, and sprinkle the grated Parmesan evenly over the top.

          Cover and bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes. This will help cook the potatoes evenly and prevent the top from getting too brown.

            Uncover and brown: After 45 minutes, remove the foil and continue to bake for an additional 20-25 minutes, or until the cheese is bubbly and golden brown and the potatoes are tender when pierced with a fork.

              Garnish and serve: Remove from the oven and let it rest for about 10 minutes. Sprinkle with fresh chives for a pop of color and added flavor before serving.
