2 lbs russet potatoes, peeled and cut into cubes

1 cup sour cream

1 cup sharp cheddar cheese, shredded

1 cup seasoned breadcrumbs

1/2 cup green onions, chopped (plus extra for garnish)

1/2 cup cream cheese, softened

1/4 cup milk

1 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

1/4 cup butter, melted

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Potatoes: In a large pot, bring salted water to a boil and add the cubed potatoes. Boil them until fork-tender, about 15-20 minutes. Drain and let cool slightly.

      Prepare the Cheese Mixture: In a large mixing bowl, combine the sour cream, softened cream cheese, and milk. Stir until smooth. Then add the shredded sharp cheddar cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.

        Combine Potatoes and Cheese Mixture: Add the drained potatoes to the cheese mixture and fold gently until all the potatoes are well-coated with the creamy goodness.

          Add Green Onions: Stir in the chopped green onions, reserving a small amount for garnish.

            Prepare Topping: In a separate bowl, combine the seasoned breadcrumbs with the melted butter. Mix until the breadcrumbs are evenly coated.

              Assemble the Dish: Transfer the potato mixture into a greased 9x13-inch baking dish. Evenly spread the breadcrumb mixture over the top.

                Bake: Place the dish in the preheated oven and bake for 25-30 minutes or until the top is golden brown and bubbly.
