Cheesy Salsa Chicken Quesadilla Bake

2 cups cooked, shredded chicken

1 cup salsa (your choice of spicy or mild)

2 cups shredded cheddar cheese

1 cup shredded mozzarella cheese

8 flour tortillas (10-inch size)

1 teaspoon cumin powder

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 cup fresh cilantro, chopped (optional)

1 tablespoon olive oil

Sour cream and guacamole for serving (optional)

Instructions
 

Preheat & Prepare Dish: Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish with olive oil.

    Mix Chicken & Salsa: In a large mixing bowl, combine the shredded chicken, salsa, cumin, garlic powder, and onion powder. Stir until everything is well incorporated.

      Assemble the Quesadillas: On a clean surface, lay out four tortillas. Evenly distribute half of the chicken mixture on each tortilla, then sprinkle with half of the cheddar and mozzarella cheeses. Place another tortilla on top to create quesadillas.

        Layer in Baking Dish: Carefully transfer the assembled quesadillas to the greased baking dish. Layer them closely; you may need to cut some to fit as needed.

          Add Remaining Toppings: Pour the remaining salsa over the top of the quesadillas. Follow with the remaining shredded cheeses evenly spread over the top.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 15 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

              Garnish & Serve: Once out of the oven, allow cooling for a few minutes. Optionally, sprinkle with freshly chopped cilantro. Slice into squares and serve with sour cream and guacamole on the side.
