4 boneless, skinless chicken breasts

1 cup frozen spinach, thawed and drained

1 cup canned artichoke hearts, drained and chopped

1 cup cream cheese, softened

1/2 cup sour cream

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper to taste

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare the Filling: In a mixing bowl, combine the softened cream cheese, sour cream, mozzarella cheese, Parmesan cheese, chopped artichokes, drained spinach, minced garlic, onion powder, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined and creamy.

      Prepare the Chicken: Using a sharp knife, make a pocket in each chicken breast by slicing horizontally, being careful not to cut all the way through.

        Stuff the Chicken: Generously fill each chicken breast pocket with the cheesy spinach and artichoke mixture. You can use toothpicks to secure the opening if needed.

          Sear the Chicken: In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the stuffed chicken breasts. Sear each side for about 3-4 minutes or until golden brown.

            Bake the Chicken: Transfer the skillet to the preheated oven. Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the filling is bubbly.

              Rest and Serve: Once done, remove the skillet from the oven. Allow the chicken to rest for 5 minutes before slicing. Garnish with fresh parsley and serve warm.
