20 jumbo pasta shells

1 cup fresh spinach, chopped

1 cup canned artichoke hearts, drained and chopped

1 cup ricotta cheese

1 cup cream cheese, softened

1 cup shredded mozzarella cheese, plus extra for topping

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional, for kick)

2 cups marinara sauce

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: Bring a large pot of salted water to a boil. Add the jumbo pasta shells and cook according to package instructions until al dente. Drain and set aside to cool.

      Prepare the Filling: In a large mixing bowl, combine the ricotta cheese, cream cheese, and half of the mozzarella cheese. Stir in the chopped spinach, chopped artichokes, minced garlic, onion powder, salt, black pepper, and red pepper flakes (if using) until well combined.

        Stuff the Shells: Using a teaspoon or a piping bag, stuff each cooked shell with the cheesy spinach and artichoke mixture. Place the stuffed shells into a greased 9x13-inch baking dish.

          Add the Sauce: Pour the marinara sauce evenly over the stuffed shells, ensuring that all shells are covered. Sprinkle the remaining mozzarella cheese and grated Parmesan cheese on top.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.
