Cheesy Spinach and Ricotta Stuffed Shells

20 jumbo pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 large egg, lightly beaten

2 cloves garlic, minced

1 teaspoon dried Italian herbs (oregano, basil, etc.)

Salt and pepper to taste

3 cups marinara sauce

Fresh basil for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: Bring a large pot of salted water to a boil. Add the jumbo shells and cook according to package instructions until al dente. Drain and set aside to cool slightly.

      Prepare the Filling: In a large mixing bowl, combine the chopped spinach, ricotta cheese, half of the mozzarella cheese, half of the Parmesan cheese, beaten egg, minced garlic, dried Italian herbs, salt, and pepper. Mix until smooth and well combined.

        Stuff the Shells: Take each cooked shell and carefully fill it with the spinach and ricotta mixture using a spoon or a piping bag for easier filling.

          Layer with Sauce: Spread 1 cup of marinara sauce on the bottom of a 9x13 inch baking dish. Arrange the stuffed shells in the dish, seam side up. Pour the remaining marinara sauce over the shells, ensuring they are well coated.

            Add Cheese Topping: Sprinkle the remaining mozzarella and Parmesan cheese over the top of the shells for that perfect cheesy crust.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
