4 medium zucchinis, spiralized (zoodles)

1 lb ground beef or turkey

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes, with green chilies

1 cup corn kernels, fresh or frozen

2 cups shredded cheddar cheese (divided)

1 cup shredded Monterey Jack cheese

1/2 cup sour cream

1/4 cup chopped fresh cilantro (for garnish)

Salt and pepper to taste

Cooking spray or olive oil

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C). Grease a 9x13 inch casserole dish with cooking spray or a drizzle of olive oil.

    Cook the meat: In a large skillet over medium heat, add a splash of olive oil. Once heated, add the diced onion and cook for about 3-4 minutes until translucent. Add the minced garlic and ground beef or turkey, breaking it up with a spatula. Cook until the meat is browned and no longer pink, about 5-7 minutes.

      Add seasoning: Stir in the taco seasoning, black beans, diced tomatoes, and corn. Mix well and let this simmer for about 5 minutes to combine the flavors. Season with salt and pepper to taste.

        Prepare the zoodles: While the ground meat mixture is simmering, spiralize the zucchinis and place the zoodles in the bottom of the prepared casserole dish. It’s okay if they overlap a little; they will shrink as they cook.

          Layer the casserole: Pour the seasoned meat mixture evenly over the zoodles. Spread it out gently so it covers the zoodles. In a separate bowl, combine 1 cup of cheddar cheese and the Monterey Jack cheese. Sprinkle half of this cheese mixture over the meat layer.

            Add sour cream: Spoon dollops of sour cream over the cheesy layer, then spread it slightly with the back of a spoon for even coverage.

              Top with cheese: Finally, add the remaining meat-cheese combination on top, ensuring an even layer. Sprinkle the remaining cheddar cheese on top of the casserole.

                Bake: Cover the casserole with aluminum foil (to prevent over-browning) and bake in the preheated oven for 25 minutes. Remove the foil and continue to bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
