Cheesy Zucchini Casserole

4 medium zucchinis, sliced thin

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup ricotta cheese

1 large egg

1/2 cup grated Parmesan cheese

1 cup breadcrumbs (preferably whole wheat)

2 cloves garlic, minced

1 small onion, finely chopped

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley for garnish (optional)

Instructions
 

Preheat the oven: Start by preheating your oven to 375°F (190°C). Grease a 9x13-inch baking dish with a bit of olive oil or cooking spray.

    Prepare the veggies: In a large skillet over medium heat, add 2 tablespoons of olive oil. Sauté the chopped onion and minced garlic until they are fragrant and the onion is translucent, about 3-4 minutes. Add the sliced zucchinis and sauté until they soften, about 5-7 minutes. Season with salt, pepper, and dried Italian herbs. Remove from heat and allow to cool for a few minutes.

      Mix the cheese mixture: In a large bowl, combine ricotta cheese, the beaten egg, and half of the cheddar and mozzarella cheeses. Mix well until creamy. Add in the cooled zucchini mixture, mixing until the zucchini is evenly distributed throughout.

        Layer the casserole: In the prepared baking dish, spread half of the zucchini and cheese mixture evenly. Then, sprinkle half of the grated Parmesan cheese over the top. Layer the remaining zucchini mixture on top, followed by the rest of the cheddar and mozzarella cheeses. Finally, sprinkle the remaining Parmesan cheese and breadcrumbs on top for a crispy finish.

          Bake: Cover the casserole with aluminum foil (to prevent burning) and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and bubbly.

            Garnish and serve: Once out of the oven, let the casserole cool for about 5 minutes. Garnish with fresh parsley if desired, then slice and serve warm.
