Ingredients

12 ounces spaghetti or fettuccine

2 cups cherry tomatoes, halved

2 cloves garlic, minced

1/4 cup extra-virgin olive oil, plus more for drizzling

1 teaspoon red pepper flakes (adjust to taste)

Salt, to taste

Freshly cracked black pepper, to taste

1 cup fresh basil leaves, torn

8 ounces burrata cheese

Zest of 1 lemon

Freshly grated Parmesan cheese, for serving

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the spaghetti or fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water before draining.

Sauté Cherry Tomatoes: In a large skillet over medium heat, combine olive oil, minced garlic, and red pepper flakes. Sauté for about 1 minute until fragrant, then add the halved cherry tomatoes. Cook for 5-7 minutes, stirring occasionally, until the tomatoes start to burst and release their juices.

Combine Pasta and Sauce: Add the drained pasta directly to the skillet with the cherry tomatoes. Toss to combine, adding reserved pasta water a little at a time until the desired creaminess is achieved. Season with salt and freshly cracked black pepper to taste.

Incorporate Fresh Ingredients: Remove the skillet from heat and stir in the torn basil leaves and lemon zest for a fresh pop of flavor.

Plate the Pasta: Divide the pasta among serving plates. Tear the burrata cheese into pieces and place it on top of each serving.

Serve: Drizzle with a bit more olive oil and sprinkle with freshly grated Parmesan cheese, if desired. Serve immediately and enjoy the delightful burst of flavors!
