2 cups cooked, shredded chicken

1 cup diced onions

2 cloves garlic, minced

1 can (10 oz) diced tomatoes with green chilies

1 cup corn (fresh or frozen)

1 cup black beans, drained and rinsed

1 teaspoon cumin

1 teaspoon chili powder

½ teaspoon smoked paprika

Salt and pepper to taste

8 flour tortillas

2 cups shredded cheese (cheddar and Monterey Jack blend)

1 cup enchilada sauce (store-bought or homemade)

Fresh cilantro, chopped (for garnish)

Sour cream (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Filling: In a large skillet over medium heat, add a drizzle of olive oil. Sauté the diced onions for about 3-4 minutes until translucent. Add the minced garlic and cook for an additional minute.

      Combine Ingredients: In the skillet, add the shredded chicken, diced tomatoes (with their juice), corn, black beans, cumin, chili powder, smoked paprika, salt, and pepper. Stir well to combine and let it cook for about 5-7 minutes, allowing the flavors to meld together. Remove from heat.

        Assemble the Enchiladas: Spread about ½ cup of enchilada sauce on the bottom of a 9x13-inch baking dish. Take a flour tortilla, add about ⅓ cup of the chicken mixture to the center, and sprinkle with a little cheese. Roll the tortilla tightly and place it seam-side down in the baking dish. Repeat for the remaining tortillas.

          Top with Sauce and Cheese: Once all the enchiladas are in the dish, pour the remaining enchilada sauce evenly over the top. Sprinkle the remaining cheese over the sauce.

            Bake: Cover the baking dish with foil (to prevent sticking). Bake in preheated oven for 20 minutes, then remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.

              Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with chopped cilantro. Serve warm with a dollop of sour cream on top.
