Chicken, Mushroom, and Spinach Lasagna

For the Filling:

2 cups cooked chicken, shredded

1 cup mushrooms, sliced

2 cups fresh spinach

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

½ cup Parmesan cheese, grated

2 cloves garlic, minced

1 small onion, finely chopped

1 cup marinara sauce

1 tsp dried basil

1 tsp dried oregano

Salt and pepper to taste

For the Lasagna:

9-12 lasagna noodles (no-boil or traditional)

2 cups marinara sauce (for layering)

Additional mozzarella for topping

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Filling:

      - In a large skillet over medium heat, add a splash of olive oil and sauté the chopped onion and minced garlic until fragrant and translucent, about 3-4 minutes.

        - Add the sliced mushrooms to the skillet, cooking until softened, about 5 minutes.

          - Stir in the fresh spinach and cook until wilted.

            - Remove from heat and add the shredded chicken, ricotta cheese, 1 cup of mozzarella, and Parmesan cheese. Mix well, then season with basil, oregano, salt, and pepper.

              Assemble the Lasagna:

                - Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish.

                  - Place a layer of lasagna noodles over the sauce. If using traditional noodles, ensure they overlap slightly.

                    - Spread half of the chicken and vegetable filling evenly over the noodles, then cover with another layer of marinara sauce.

                      - Repeat layering: noodles, remaining filling, and marinara sauce. Finish with a final layer of noodles topped with marinara sauce, ensuring all noodles are well-saturated.

                        - Sprinkle additional mozzarella on top for that perfect golden crust.

                          Bake: Cover the baking dish with aluminum foil (to prevent sticking, you can spray foil with cooking spray). Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until bubbly and golden.

                            Rest and Serve: Allow the lasagna to cool for about 10 minutes before slicing. Serve warm and enjoy your delicious creation!
