Chicken Parmesan with Marinara and Mozzarella

2 boneless, skinless chicken breasts

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably Italian seasoned)

1 cup marinara sauce (store-bought or homemade)

1 ½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese

2 tablespoons fresh basil, chopped (plus extra for garnishing)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

½ teaspoon black pepper

Olive oil (for frying)

Cooked spaghetti or side salad (for serving)

Instructions
 

Prepare the Chicken: Preheat your oven to 400°F (200°C). Place each chicken breast between two sheets of plastic wrap and gently pound with a meat mallet until they are about ½ inch thick.

    Coat the Chicken: Set up a dredging station by placing the flour in a shallow dish, whisking the eggs in a second dish, and combining breadcrumbs, garlic powder, onion powder, salt, and pepper in a third dish. Dredge each chicken breast in flour, shaking off the excess, then dip into the egg, followed by the breadcrumb mixture, making sure each breast is well-coated.

      Fry the Chicken: Heat about ¼ inch of olive oil in a large skillet over medium heat. Once hot, add the breaded chicken breasts in batches (do not overcrowd the pan) and cook for about 4-5 minutes on each side or until golden brown and cooked through. Remove from the skillet and drain on paper towels.

        Assemble the Dish: In a baking dish, spread a thin layer of marinara sauce on the bottom. Place the fried chicken breasts on top of the sauce. Spoon additional marinara sauce over each chicken breast, then sprinkle with mozzarella and Parmesan cheese.

          Bake: Transfer the baking dish to the preheated oven and bake for about 20 minutes or until the cheese is bubbly and lightly golden.

            Serve: Remove from the oven and let it cool slightly before garnishing with fresh basil. Serve hot alongside cooked spaghetti or a fresh side salad.
