4 slices of thick bread (sourdough or whole grain recommended)

4 large eggs

1 cup shredded cheddar cheese

1 cup cooked chili (homemade or canned)

1/2 teaspoon cumin

1/2 teaspoon smoked paprika

Salt and black pepper to taste

2 green onions, chopped (for garnish)

Fresh cilantro leaves (for garnish)

Cooking spray or butter for greasing

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Prepare the Bread: Using a rolling pin, flatten each slice of bread slightly. Then, carefully cut out a circle from the center of each slice, creating a cup shape. You can use a glass or cookie cutter that is smaller than the bread slice.

      Grease the Muffin Tin: Lightly spray or butter a muffin tin to prevent the bread from sticking.

        Create the Toast Cups: Press each piece of flattened bread into the muffin tin slots, making sure it forms a cup shape that can hold your filling.

          Whisk the Eggs: In a mixing bowl, crack open the eggs and whisk them until well combined. Add cumin, smoked paprika, salt, and black pepper, and mix well.

            Add the Chili and Cheese: Spoon a small amount of cooked chili into the bottom of each toast cup, just enough to cover the base. Then, pour the whisked eggs on top, filling each cup about three-quarters full. Finally, sprinkle a generous amount of shredded cheddar cheese on top of the eggs.

              Bake: Place the muffin tin in the preheated oven and bake for about 15-20 minutes, or until the egg is set and the cheese is melted and bubbly.
