Chili Cheese Veggie Fries

2 large sweet potatoes, cut into fries

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1 cup canned kidney beans, rinsed and drained

1 cup canned diced tomatoes (with juice)

1 tablespoon chili powder

1 teaspoon cumin

1/2 teaspoon crushed red pepper flakes (optional)

1 cup shredded cheddar cheese (or vegan cheese for a dairy-free option)

1/4 cup chopped fresh cilantro (for garnish)

Sour cream or Greek yogurt (for serving, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Make the Sweet Potato Fries: In a large bowl, toss the cut sweet potato fries with olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper until well coated. Spread them out in a single layer on a baking sheet lined with parchment paper.

      Bake Fries: Bake in the preheated oven for 25-30 minutes, flipping halfway through, until golden brown and crispy.

        Prepare the Chili Mixture: While the fries are baking, in a medium saucepan over medium heat, combine the kidney beans, diced tomatoes, chili powder, cumin, and crushed red pepper flakes. Stir well and simmer for about 10-15 minutes to let the flavors meld. Remove from heat.

          Assemble the Veggie Fries: Once the fries are done, remove them from the oven and immediately sprinkle the shredded cheese on top while the fries are still hot. Return to the oven for another 3-5 minutes, or until the cheese is melted and bubbly.
