Chili Chicken Breakfast Burrito Bakes

2 cups cooked chicken, shredded (preferably chili-seasoned)

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 medium red bell pepper, diced

1 small green bell pepper, diced

1 small onion, finely chopped

4 large eggs

1/2 cup milk

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon chili powder

1/2 teaspoon cumin

Salt and pepper to taste

4 large tortillas (flour or whole wheat)

Fresh cilantro, for garnish (optional)

Salsa, for serving (optional)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Sauté Vegetables: In a large skillet over medium heat, add a splash of oil. Sauté the chopped onion, red bell pepper, and green bell pepper until they are soft, about 5-7 minutes. Season with salt and pepper.

      Combine Ingredients: In a large mixing bowl, combine the shredded chicken, black beans, corn, sautéed vegetables, garlic powder, chili powder, and cumin. Mix until well-combined.

        Prepare Egg Mixture: In another bowl, whisk together the eggs, milk, and a pinch of salt and pepper until the mixture is smooth.

          Assemble Burritos: Lay a tortilla flat on a clean surface. Spoon about 1/4 of the chicken mixture onto the center of the tortilla, then top with a sprinkle of shredded cheddar cheese. Fold in the sides and roll up tightly.

            Bake: Place the burritos seam-side down in a greased baking dish. Once all burritos are in the dish, pour the egg mixture evenly over the top. Sprinkle the remaining cheese over everything and cover with aluminum foil.

              Bake: Bake in the preheated oven for 25 minutes covered. Remove the foil and bake for an additional 10-15 minutes, or until the egg is set and the cheese is bubbly and starting to brown.

                Serve: Allow the burrito bakes to cool for a few minutes before slicing. Garnish with fresh cilantro if using and serve with salsa on the side.
