14 oz (400g) firm tofu, pressed and drained

2 tablespoons soy sauce

1 tablespoon sesame oil

2 tablespoons chili garlic sauce

1 tablespoon maple syrup or agave nectar

1 teaspoon rice vinegar

1 red bell pepper, cut into 1-inch pieces

1 zucchini, sliced into thick rounds

½ cup cherry tomatoes

Salt and pepper to taste

Fresh cilantro, for garnish

Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

Instructions
 

Prepare the Tofu: Cut the pressed tofu into 1-inch cubes. This allows for even marinating and grilling.

    Make the Marinade: In a bowl, combine soy sauce, sesame oil, chili garlic sauce, maple syrup, and rice vinegar. Whisk until well blended.

      Marinate the Tofu: Place the tofu cubes in the marinade and let it sit for at least 30 minutes, preferably in the refrigerator to absorb the flavors.

        Prep the Vegetables: While the tofu is marinating, prepare the vegetables. Cut the red bell pepper into 1-inch pieces and slice the zucchini into thick rounds.

          Assemble the Skewers: Take a skewer and thread on a piece of tofu, followed by a piece of bell pepper, zucchini, and cherry tomato. Repeat this pattern until the skewer is filled, leaving space at both ends for handling.

            Preheat the Grill: Preheat your grill to medium-high heat. Lightly grease the grill grates or use a non-stick spray to prevent sticking.

              Grill the Skewers: Place the assembled skewers on the grill. Cook for about 10-12 minutes, turning every few minutes, until the tofu is golden brown and the vegetables are tender.

                Season: Once grilled, sprinkle the skewers with salt and pepper to taste.
