Chili Honey Glazed Chicken Nuggets

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (Panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

½ cup honey

¼ cup sweet chili sauce

1 tablespoon soy sauce

1 tablespoon sriracha (adjust to taste)

Vegetable oil (for frying)

Fresh cilantro or green onions (for garnish)

Prepare the Chicken: In a large bowl, mix the chicken pieces with garlic powder, onion powder, smoked paprika, salt, and black pepper. Ensure the chicken is evenly coated with the spices. Set aside for at least 15 minutes for the flavors to meld.

    Set Up Breading Station: In three separate shallow bowls, place the flour in the first bowl. Beat the eggs in the second bowl. Place the breadcrumbs in the third bowl.

      Coat the Chicken: Taking each piece of chicken, first dredge it in flour, shaking off any excess. Next, dip it into the beaten eggs, allowing any excess to drip off, and finally, coat it with breadcrumbs, pressing gently to ensure they adhere well. Place the coated nuggets on a plate or baking sheet.

        Heat the Oil: In a large skillet or deep fryer, pour enough vegetable oil to cover the bottom by about 1 inch. Heat the oil over medium-high heat until it reaches 350°F (175°C).

          Fry the Nuggets: Carefully place the chicken nuggets in the hot oil, making sure not to overcrowd the pan. Fry in batches for about 4-5 minutes on each side or until they are golden brown and cooked through. Use a slotted spoon to transfer the fried nuggets to a paper towel-lined plate to drain excess oil.

            Prepare the Chili Honey Glaze: In a small saucepan over medium heat, combine honey, sweet chili sauce, soy sauce, and sriracha. Stir until combined and let it simmer for about 2-3 minutes, allowing it to thicken slightly.

              Glaze the Nuggets: Once the chicken nuggets are fried, transfer them to a large mixing bowl. Pour the chili honey glaze over the nuggets and toss gently until they are fully coated.

                Serve: Arrange the glazed chicken nuggets on a serving platter. Garnish with chopped fresh cilantro or green onions for a burst of color and flavor. Serve hot, with extra sweet chili sauce on the side for dipping if desired.
