4-6 tablespoons ice water

3 ripe peaches, pitted and thinly sliced (you can mix with nectarines if desired)

2 tablespoons brown sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 tablespoon cornstarch

Pinch of cinnamon

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the crust:
