1 pound large shrimp, peeled and deveined

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 lime, juiced

2 tablespoons olive oil

1 teaspoon honey

Salt and pepper to taste

1 teaspoon chili powder (optional for a kick)

Mixed greens for serving (arugula, spinach, or lettuce)

Instructions
 

Prepare the Shrimp: In a large pot, bring water to a boil. Add a pinch of salt and the shrimp. Cook for 2-3 minutes or until they turn pink and opaque. Drain and immediately plunge the shrimp in an ice bath to stop the cooking process. Let cool, then drain again and set aside.

    Make the Dressing: In a small bowl, whisk together the lime juice, olive oil, honey, salt, pepper, and chili powder (if using). Adjust seasoning to taste.

      Combine Ingredients: In a large mixing bowl, gently combine the cooled shrimp, diced avocados, cherry tomatoes, red onion, and cilantro. Drizzle the dressing over the salad and toss gently to combine, ensuring the avocados do not mash.
