2 cups fresh corn kernels (or 1 can of corn, drained and rinsed)

1 medium red onion, diced

1-2 chipotle peppers in adobo sauce, finely chopped (adjust to heat preference)

1/4 cup fresh cilantro, chopped

1 medium red bell pepper, diced

2 tablespoons lime juice (about 1 lime)

1/2 teaspoon garlic powder

Salt and pepper to taste

Optional: 1 jalapeño, seeded and minced for extra heat

Optional: 1 avocado, diced, for creaminess

Prepare Ingredients: If using fresh corn, boil or grill it until tender, then cut the kernels off the cob. If using canned corn, simply drain and rinse under cold water. Set aside.
