Ingredients

1 ripe avocado (medium, about 150g)

1/2 cup almond butter

1/2 cup maple syrup (or honey)

1 tsp vanilla extract

1/4 cup unsweetened cocoa powder

1/2 cup almond flour

1/2 cup protein powder (chocolate flavor recommended)

1/2 tsp baking soda

1/4 tsp salt

1/2 cup dark chocolate chips (dairy-free if desired)

Optional: 1/4 cup crushed nuts (walnuts or pecans for topping)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking dish or line it with parchment paper.

Prepare the Avocado: In a mixing bowl, mash the ripe avocado until smooth and creamy. Make sure there are no lumps.

Mix Wet Ingredients: Add the almond butter, maple syrup, and vanilla extract to the mashed avocado. Mix well until fully combined and smooth.

Combine Dry Ingredients: In a separate bowl, whisk together the cocoa powder, almond flour, protein powder, baking soda, and salt until well blended.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Avoid overmixing to keep the brownies tender.

Add Chocolate Chips: Fold in the dark chocolate chips, reserving a few for topping if desired.

Bake: Pour the brownie batter into the prepared baking dish and spread it evenly. Sprinkle any remaining chocolate chips or nuts on top, if using. Bake for 20-25 minutes or until a toothpick inserted into the center comes out mostly clean.

Cool & Serve: Allow the brownies to cool in the pan for about 10 minutes before transferring them to a wire rack. Once cool, cut them into squares and enjoy!
