Chocolate Peanut Butter Lava Cake

1/2 cup unsalted butter

4 oz. semi-sweet chocolate, chopped

1 cup powdered sugar

2 large eggs

2 large egg yolks

1 tsp vanilla extract

1/2 cup all-purpose flour

1/4 tsp salt

1/2 cup creamy peanut butter

Optional: Chopped peanuts or sea salt for garnish

Preheat the Oven: Preheat your oven to 425°F (220°C). Grease four individual ramekins with butter and dust with cocoa powder to prevent sticking.

    Melt the Chocolate and Butter: In a microwave-safe bowl, combine the unsalted butter and chopped semi-sweet chocolate. Heat in the microwave in 20-second intervals, stirring between each until completely melted and smooth.

      Mix in Sugar: Stir the powdered sugar into the melted chocolate mixture until well combined.

        Add Eggs and Vanilla: Whisk in the eggs and egg yolks one at a time, followed by the vanilla extract. Make sure everything is well blended and smooth.

          Incorporate Dry Ingredients: Gently fold in the all-purpose flour and salt until just combined. Be careful not to overmix.

            Prepare the Peanut Butter Filling: In a small bowl, slightly warm the creamy peanut butter in the microwave for about 10-15 seconds to make it easier to spoon.

              Fill Ramekins: Divide half of the batter evenly among the four prepared ramekins. Make a small well in the center of each and gently spoon 1 tablespoon of warmed peanut butter into the well. Cover with the remaining batter.

                Bake: Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft and gooey.

                  Cool Slightly: Remove from the oven and let them cool for 1-2 minutes. Carefully run a knife around the edges to loosen the cakes.
