Ingredients

2 cups rolled oats

1 ½ cups unsweetened applesauce

1 cup almond milk (or your choice of milk)

½ cup brown sugar (or maple syrup for a healthier option)

1 tsp vanilla extract

1 tsp baking powder

1 tsp ground cinnamon

½ tsp nutmeg

¼ tsp salt

1 large apple, peeled, cored, and diced (preferably a sweet variety like Honeycrisp or Fuji)

½ cup chopped walnuts or pecans (optional)

Optional: ¼ cup raisins or dried cranberries for added sweetness

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9x9 inch baking dish or line it with parchment paper for easy removal.

Mix Wet Ingredients: In a large mixing bowl, combine the applesauce, almond milk, brown sugar (or maple syrup), and vanilla extract. Stir until well combined.

Add Dry Ingredients: In another bowl, whisk together the rolled oats, baking powder, ground cinnamon, nutmeg, and salt.

Combine Mixtures: Gradually add the dry oat mixture to the wet mixture, stirring until everything is fully incorporated. Fold in the diced apple and nuts (if using) until evenly distributed throughout the batter.

Spread in Baking Dish: Pour the mixture into your prepared baking dish, spreading it evenly into the corners.

Bake: Place in the oven and bake for 30-35 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.

Cool and Slice: Once done, remove from the oven and let it cool in the pan for about 10-15 minutes. Then, transfer to a wire rack to cool completely before slicing into squares.

Serve: Serve warm or at room temperature. These squares can be enjoyed on their own or drizzled with a bit of honey or maple syrup. They also store well in an airtight container in the fridge for up to a week.
