Ingredients

2 cups rolled oats

2 cups unsweetened almond milk (or any milk of choice)

1/4 cup maple syrup (or honey)

1/4 cup unsweetened applesauce

1 teaspoon vanilla extract

1 teaspoon baking powder

1 tablespoon ground cinnamon

1/4 teaspoon salt

1/2 cup chopped pecans or walnuts (optional)

2 tablespoons brown sugar

1 tablespoon melted coconut oil or butter (for topping)

For the Cinnamon Swirl:

2 tablespoons brown sugar

1 tablespoon ground cinnamon

1 tablespoon melted butter (or coconut oil)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9x9-inch baking dish.

Prepare the Base: In a large mixing bowl, combine rolled oats, almond milk, maple syrup, applesauce, vanilla extract, baking powder, ground cinnamon, and salt. Stir until well combined.

Add Nuts (Optional): If you're using nuts, fold in the chopped pecans or walnuts for added crunch and flavor.

Make the Cinnamon Swirl: In a small bowl, mix together the brown sugar and ground cinnamon for the swirl. Set aside.

Layer the Mixture: Pour half of the oat mixture into the prepared baking dish. Sprinkle the cinnamon-sugar mixture evenly over this layer, then top with the remaining oat mixture. Gently swirl with a knife to create a marbled effect.

Top it Off: Drizzle the melted coconut oil or butter over the top for an extra layer of flavor.

Bake: Place the dish in the preheated oven and bake for 30-35 minutes or until the top is golden brown and the oats are set.

Cool and Serve: Allow it to cool for a few minutes before slicing into squares. Serve warm, optionally drizzling with additional maple syrup and topping with yogurt or cream cheese frosting.
