1 cup grated zucchini (about 1 medium zucchini, well-drained)

1 cup all-purpose flour

1/2 cup granulated sugar

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg (optional)

1/4 teaspoon salt

1 large egg

1/4 cup unsweetened applesauce

1/4 cup milk (dairy or non-dairy)

1 teaspoon vanilla extract

1/4 cup melted butter (or coconut oil for a dairy-free version)

1/2 cup granulated sugar (for coating)

1 tablespoon ground cinnamon (for coating)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease or spray a donut pan with cooking spray.

    Prepare the Zucchini: Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture. Set aside.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, 1/2 cup sugar, baking powder, baking soda, cinnamon, nutmeg (if using), and salt until well combined.

        Combine Wet Ingredients: In another bowl, whisk together the egg, applesauce, milk, vanilla extract, and melted butter until smooth.

          Combine Mixtures: Pour the wet ingredients into the dry ingredients and fold gently with a spatula until just incorporated. Then, fold in the grated zucchini until evenly distributed.

            Fill the Donut Pan: Spoon or pipe the batter into the prepared donut pan, filling each cavity about 2/3 full.

              Bake the Donuts: Bake in the preheated oven for 12-15 minutes or until a toothpick inserted in the center comes out clean. Allow the donuts to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

                Prepare the Cinnamon Sugar Coating: In a small bowl, mix together 1/2 cup sugar and 1 tablespoon cinnamon.

                  Coat the Donuts: Once the donuts are cool enough to handle, roll or dip each one in the cinnamon sugar mixture, ensuring they are fully coated on all sides.
