8 ounces of rotini or fusilli pasta

2 cups cooked chicken breast, diced

4 strips of crispy bacon, chopped

1 cup cherry tomatoes, halved

1 avocado, diced

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1 cup crumbled blue cheese

1/4 cup fresh parsley, chopped

Salt and pepper to taste

1/4 cup olive oil

2 tablespoons red wine vinegar

1 tablespoon Dijon mustard

1 tablespoon honey or maple syrup

1 garlic clove, minced

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Transfer to a large mixing bowl.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, honey or maple syrup, minced garlic, salt, and pepper until well combined and emulsified.

      Combine Ingredients: To the bowl of cooled pasta, add the cooked chicken, chopped bacon, cherry tomatoes, avocado, cucumber, red onion, and crumbled blue cheese.

        Add the Dressing: Pour the dressing over the pasta salad and gently toss to combine everything evenly. Be careful with the avocado to prevent crushing it.

          Season and Serve: Taste and adjust seasoning with more salt and pepper if needed. Garnish with freshly chopped parsley. Serve chilled or at room temperature.
