1 lb ground beef (preferably 80/20 for juiciness)

1 lb ground pork

1 small onion, finely chopped

1 small green bell pepper, finely chopped

2 cloves garlic, minced

1 cup breadcrumbs

1/2 cup milk

2 large eggs

1 tbsp Worcestershire sauce

1 tsp salt

1/2 tsp black pepper

1/2 tsp smoked paprika

For the Topping:

8 slices provolone cheese (or your preferred cheese)

1/4 cup chopped fresh parsley (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Sauté Vegetables: In a skillet over medium heat, add a splash of oil. Sauté the chopped onion and green pepper for about 5-7 minutes, until softened. Stir in the minced garlic and cook for an additional minute. Remove from heat and let cool slightly.

      Mix the Meatloaf Ingredients: In a large mixing bowl, combine the ground beef and pork. Add the sautéed vegetables, breadcrumbs, milk, eggs, Worcestershire sauce, salt, black pepper, and smoked paprika. Mix until just combined; be careful not to overmix.

        Shape the Meatloaf: Transfer the meat mixture to a lightly greased loaf pan or shape into a free-form loaf on a baking sheet lined with parchment paper.

          Bake the Meatloaf: Place in the preheated oven and bake for about 50-60 minutes, or until the internal temperature reaches 160°F (71°C).
