1 lb chicken breast, cut into 1-inch cubes

1 cup coconut milk

Zest and juice of 2 limes

2 tablespoons brown sugar

2 tablespoons soy sauce

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional, for heat)

Bamboo or metal skewers (if using bamboo, soak in water for 30 minutes)

Instructions
 

Marinate the Chicken: In a large mixing bowl, combine coconut milk, lime zest, lime juice, brown sugar, soy sauce, minced garlic, grated ginger, salt, black pepper, and red pepper flakes. Whisk until well combined.

    Add Chicken to Marinade: Add the cubed chicken breast to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more intense flavors.

      Prepare the Skewers: If using bamboo skewers, ensure they’re soaked to prevent burning while grilling. Preheat your grill to medium-high heat.

        Assemble Skewers: Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.

          Grill the Skewers: Place the skewers on the grill and cook for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks. Baste with leftover marinade during grilling for extra flavor.

            Serve: Remove from the grill and let them rest for a minute. Serve with lime wedges and a sprinkle of fresh cilantro for garnish.
