1 cup rolled oats

½ cup unsweetened shredded coconut

½ cup almond butter (or any nut butter of choice)

¼ cup honey or maple syrup

Zest of 1 lime

2 tablespoons lime juice (freshly squeezed)

2 tablespoons chia seeds

½ teaspoon vanilla extract

1 pinch of salt

Optional: ¼ cup dark chocolate chips or dried fruit for added sweetness

Instructions
 

Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, shredded coconut, chia seeds, and a pinch of salt. Mix well to ensure all dry ingredients are evenly distributed.

    Mix Wet Ingredients: In a separate bowl, whisk together the almond butter, honey (or maple syrup), lime juice, lime zest, and vanilla extract until smooth and creamy.

      Combine Mixtures: Pour the wet mixture into the bowl of dry ingredients. Stir using a spatula or wooden spoon until everything is well combined. If desired, fold in the dark chocolate chips or dried fruit at this stage.

        Shape the Bites: Use your hands to scoop out small amounts of the mixture (about 1 tablespoon each) and roll them into balls. Place each ball onto a parchment-lined baking sheet.

          Chill: Once all the mixture has been rolled, refrigerate the energy bites for at least 30 minutes to firm up.
