2 ¾ cups unsweetened shredded coconut

½ cup sweetened condensed milk

1 teaspoon vanilla extract

1/4 teaspoon almond extract (optional)

2 large egg whites

1/4 teaspoon salt

1/2 cup semisweet chocolate chips (for dipping, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (163°C). Line a baking sheet with parchment paper or a silicone mat.

    Mix Coconut Base: In a large mixing bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, and almond extract (if using). Stir until well combined.

      Prepare Egg Whites: In a separate bowl, use a hand mixer or whisk to beat the egg whites and salt until stiff peaks form. This should take about 3-5 minutes.

        Fold Ingredients: Gently fold the beaten egg whites into the coconut mixture. Be careful not to deflate the egg whites to maintain the macaroons' light texture.

          Shape the Macaroons: Using a small cookie scoop or your hands, form tablespoon-sized mounds of the mixture and place them on the prepared baking sheet, spacing them about 2 inches apart.
