1 cup jasmine rice

1 cup coconut milk

1 cup water

1/4 cup granulated sugar

1/2 teaspoon salt

1/4 teaspoon vanilla extract

1/2 cup shredded coconut (unsweetened)

1/4 cup finely chopped fresh mango (optional for topping)

2 tablespoons sesame seeds (for garnish)

Fresh mint leaves (for garnish)

Instructions
 

Prepare the Rice: Rinse the jasmine rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming too sticky.

    Cook the Rice: In a medium saucepan, combine the rinsed rice, coconut milk, water, sugar, and salt. Bring the mixture to a boil over medium heat. Once boiling, reduce to low heat, cover, and let it simmer for about 15-18 minutes or until the rice is tender and the liquid is absorbed.

      Add Vanilla and Coconut: Once the rice is cooked, remove it from the heat and stir in the vanilla extract and shredded coconut. Mix well until everything is evenly combined.

        Shape the Rice Cakes: Allow the mixture to cool slightly. Once it's manageable, take small portions of the mixture and shape them into round cakes (about 2-3 inches in diameter). You can use your hands or a cookie cutter for more uniform shapes.

          Chill the Rice Cakes: Place the formed rice cakes onto a lined baking sheet. Cover with plastic wrap and refrigerate for at least 1 hour to firm up.
