2 cups rotini pasta

2 cups cooked chicken breast, shredded or diced

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, thinly sliced

1/4 cup fresh parsley, chopped

1/4 cup fresh basil, chopped

1/4 cup grated Parmesan cheese (optional)

Lemon Vinaigrette:

1/4 cup extra virgin olive oil

2 tablespoons fresh lemon juice

1 teaspoon Dijon mustard

1 teaspoon honey (or agave syrup)

Salt and pepper to taste

Cook the Pasta: In a large pot of boiling salted water, cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside in a large mixing bowl.

    Prepare the Chicken: If using leftover chicken, ensure it's shredded or diced into bite-sized pieces. If cooking fresh chicken, grill or sauté until fully cooked and cut into pieces.

      Make the Lemon Vinaigrette: In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, and honey. Season with salt and pepper to taste. Adjust the lemon and honey levels to your preference for sweetness and acidity.

        Combine Ingredients: To the bowl with the pasta, add the cooked chicken, cherry tomatoes, cucumber, red onion, parsley, and basil. Pour the lemon vinaigrette over the top.
