4 medium zucchini (zoodles)

1 cup purple cabbage, shredded

1 medium carrot, julienned

1 red bell pepper, thinly sliced

1 cup edamame (shelled and cooked)

¼ cup fresh cilantro, chopped

¼ cup green onions, chopped

For the Peanut Sesame Sauce:

¼ cup creamy peanut butter

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 tablespoon honey or maple syrup

1 teaspoon sriracha (optional for heat)

1-2 tablespoons water (to thin the sauce)

1 tablespoon toasted sesame seeds

Instructions
 

Prepare the Zoodles: Using a spiralizer or vegetable peeler, create zoodles from the zucchini. Place them in a colander and lightly sprinkle with salt. Let them sit for 10 minutes to release excess moisture. Rinse and pat dry with paper towels.

    Make the Salad Base: In a large bowl, combine the zoodles, shredded cabbage, julienned carrot, sliced bell pepper, edamame, cilantro, and green onions. Toss gently to mix.

      Prepare the Peanut Sesame Sauce: In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, sesame oil, honey (or maple syrup), sriracha (if using), and 1 tablespoon of water. Mix until smooth. If the sauce is too thick, add more water gradually until you reach your desired consistency.

        Combine and Serve: Drizzle the prepared peanut sesame sauce over the zoodle salad. Toss everything together until the zoodles and veggies are well coated with the sauce.

          Garnish: Sprinkle toasted sesame seeds over the top before serving for added crunch and flavor.

            Chill (optional): For a refreshing option, refrigerate the zoodle salad for 15-30 minutes before serving.
